Green Garlic Wasabi - Hot Sauce

This sauce is primarily green Ghost peppers with some fully riped super-hot chilis thrown in to aid with the heat. The undlying mash was on the sweet side and very reminisint of a green enchlada sauce. We bumped the heat, added some powered horseradish (the stuff everyone things is Wasabi), and a bit of garlic to round out the flavor profile. The sauce is savory, has medium heat, and would make a nice addition to Asian/Mexican mashup fish tacos. Some pickled red onion and bright vinegary slaw to offest the rich heat. Damn. Now I'm humgry.

Everything is grown organically on our farm using rain water and chicken shit.

About the growing season

Summer 2023 came on the heels of a record-breaking snow year. The growing season had a cold, wet, slow start followed by a hot spell with temperatures north of 100 degrees. Consequently, the chili plants did not set fruit until late June. With a growing season a full month short of that required for hot peppers, many peppers were picked while green. To get the super-hot varieties finished, plants were moved under-cover and allowed to mature under grow lights and supplemented heat.
